PJ understands well the difference between the food at a luxury hotel and a hospital – he has worked in both, but his heart is here at Braemar where he heads the kitchen, creating and delivering delicious menus that meet high nutritional standards, and the five-star experience Braemar Hospital is known for.
“Food is a healer – it’s a powerful tool at our disposal,” says PJ.
“The right nourishment does more than just fuel your body, it can also lift your spirits, aiding in the healing process both mentally and physically.”
PJ’s food and wellness philosophy is led by four categories: The Mind-Body Connection, Wholesome, Holistic and Trending. It is from here, seasonal menus are created and tested for their nutritional value by a registered dietician to ensure they meet high nutritional standards and comply with menu planning principles.
